Ingredients

  • 450 g potatoes
  • 50 g olives
  • 2 tbsp olive oil
  • 1 lemon
  • ½ tsp cumin
  • salt, to taste
  • pepper, to taste
  • 250 ml water

Instructions

  1. Cut the potatoes into wedges.
  2. Mix the potatoes, olives, olive oil, lemon zest, cumin, salt and pepper in a bowl.
  3. Drizzle with the lemon juice, stir well and transfer to a deep pan.
  4. Add the water and stir Bring to a boil.
  5. Cook the potatoes covered over medium heat for 10-12 minutes.
  6. Uncover the potato stew and leave on the stove for a few more minutes.
