Vegetable stew made from zucchini, potatoes, tomatoes and meat
Ingredients
- 350g pork
- oil, to taste
- 3 onions
- salt, to taste
- black pepper, to taste
- 1 carrot
- 2 peppers
- 3-4 potatoes
- 4 courgettes, small
- 5 tomatoes
- 1 bunch of herbs
Utensils
- knife
- cutting board
- stewpot
- spatula
Instructions
- Cut the meat into bite-size pieces or smaller.
- Heat the oil in a Dutch oven, add the meat and sauté under a lid over low heat for about 10 minutes. Allow the liquid to evaporate.
- Finely chop the onion and add to the pork.
- Season with salt and pepper.
- Cook for about 5 more minutes until the onions are translucent.
- Peel and grate the carrots or cut them into fine cubes.
- Add the carrots to the meat.
- Season with salt and pepper.
- Fry under the lid for 5 minutes.
- Chop the peppers into pieces and add.
- Season with salt and pepper and cook for a further 5 minutes.
- Finely dice the potatoes and zucchini.
- Put in the pan, season with salt and pepper.
- After 5 minutes, add the tomatoes and season with salt and pepper.
- Let the vegetable stew and meat stew for 10-15 minutes.
- The chopped herbs add, stir and let the stew simmer under the lid for a while.
