Vegan sausages with beans

This vegan bratwurst recipe combines beans, onions, garlic, nuts, oatmeal and numerous spices into a delicious vegetarian sausage. This hearty, healthy and incredibly delicious sausage is easy to make at home.

  • 3 tbsp chia seeds
  • 60ml water
  • 270g white beans, or canned red beans
  • ¹⁄₂ onion, medium
  • 3 cloves garlic
  • 90g rolled oats
  • 60g walnuts
  • 1 tbsp tomato paste
  • 1¹⁄₂ tbsp soy sauce
  • 2 tsp onions, dried
  • 2 tsp paprika
  • 1 tsp Italian herb mix
  • ¾ tsp salt
  • ¹⁄₂ tsp cumin powder
  • 1 pinch cayenne pepper
  • Black pepper, to taste
  • ¹⁄₂ tsp fennel seeds, to taste
  • 2-3 drops liquid smoke


  1. Grind the chia seeds in a coffee grinder.
  2. Mix in a bowl with 60 ml water.
  3. Approx. Leave to soak for 5 minutes.
  4. Rinse the beans thoroughly in a colander.
  5. Drain well.
  6. Dab dry with a paper towel.
  7. Peel and finely chop the onion and garlic.
  8. In a food processor, finely chop the rolled oats and walnuts.
  9. Do not run the food processor continuously to prevent the ingredients from turning into “flour”.
  10. Add all remaining ingredients to the food processor. Again, do not leave the food processor running continuously to mix the ingredients.
  11. Form about 6-7 sausages out of the resulting mass with your hands.
  12. If the mass is too sticky, simply add some oatmeal.
  13. The vegan sausages Place on a plate lined with parchment paper.
  14. Place in the fridge for approx. 20 minutes to cool.
  15. Wrap the vegan sausages individually in parchment paper and aluminum foil and twist in the ends.
  16. Place the sausages in a steamer.
  17. Cover roughly Steam for 35 minutes.
  18. You can serve the sausages immediately after cooking.
  19. You can also fry them in a pan or on a grill.
  20. Before frying, brush the sausages with oil on all sides and then place in the preheated pan 7-10 minutes until golden brown and crispy.
  21. Before grilling, cool the sausages down to room temperature and then in the fridge so they keep their shape better.
