Ingredients

Muffin batter

  • 40ml oil
  • 100ml buttermilk
  • 1 egg, S size
  • 125g flour
  • 1 tsp baking powder
  • 50g sugar
  • red food coloring
  • ½ tsp lemon zest

Topping

  • 100g butter , at room temperature
  • 100 g icing sugar
  • 100 g double cream cheese, at room temperature
  • sugar sprinkles, e.g. hearts

Utensils

  • Muffin tin
  • Paper liners
  • Mixing bowl
  • Hand mixer
  • Spoon
  • Whisk
  • Piping bag

Instructions

Dough

  1. Preheat the oven to 180 degrees.
  2. Line 6 muffin tins with paper cups.
  3. Mix the oil with buttermilk and egg.
  4. Stir in the lemon zest.
  5. Mix the flour, baking powder and sugar.
  6. The flour-sugar- Stir the mixture into the oil mixture.
  7. Color the batter as desired.
  8. Fill 6 muffin cups with the batter.
  9. Bake the muffins in the oven for 20-25 minutes.
  10. Let the pastry cool down.

Topping

  1. Butter mix and add icing sugar, stir until creamy.
  2. Stir in the cream cheese in portions with a whisk.
  3. Color the cream cheese frosting as desired.
  4. Pour the cream into a piping bag with a star tip and pipe onto the cupcakes.
  5. The cupcakes with candy hearts or other sprinkles.
  6. Sprinkle with coconut flakes if desired.
  7. Chill the cupcakes until ready to serve and enjoy for Valentine’s Day.
