Ingredients

  • 500 g waxy potatoes
  • 150 g onions
  • 4 eggs
  • 250 ml olive oil
  • salt, to taste

Instructions

  1. Peel the potatoes and cut into cubes.
  2. Cook in a heated pan with olive oil at medium heat for approx. 12 – 15 minutes.
  3. Peel the onion and chop finely.
  4. Sauté in another pan until golden brown.
  5. Whisk the eggs together and salt.
  6. Separate the potatoes from the olive oil using a sieve.
  7. Add the potatoes and onions to the eggs in the bowl and leave to stand for about 5 minutes.
  8. Approx. Heat 2 tablespoons of olive oil over high heat.
  9. Put the tortilla mixture in the pan and fry for 2 minutes.
  10. As soon as the mixture begins to brown, turn the tortilla over using a suitable lid or plate and add about 1 Let set for a minute.
  11. The tortilla should not dry out inside.
  12. Fried garlic prawns, salad or quark dip are fine as an accompaniment to the tortilla.
