Tabouli - Indonesian bulgur salad with cucumber and tomatoes

Bulgur salad with cucumber, tomatoes and chives is really delicious. Light and refreshing oriental dish with spicy herbs, bulgur and vegetables can be served as a salad or as an original accompaniment to meat and poultry dishes. Bulgur only has to swell in the cooking water for a few minutes and is then mixed with the fresh vegetables. After a short cooling time, a delicious meal is ready that everyone will enjoy.

  • 90 g bulgur, finely
  • 4 tomatoes
  • 1 cucumber cucumber
  • 2 bunches of parsley
  • 2-3 sprigs of mint
  • 4 sprigs of chives
  • Salt, to taste
  • 3-4 tbsp lemon juice
  • 3- 4 tbsp olive oil


  1. Rinse the bulgur and pour the boiling water over it for 5-7 minutes.
  2. Then drain in a colander and place in a bowl.
  3. Cut the tomatoes and cucumbers into small cubes.
  4. Place the tomato pieces in a colander to remove the drain excess juice.
  5. Chop the parsley, mint and chives.
  6. Mix the cooled bulgur with the vegetables and herbs in a bowl.
  7. Season the salad to taste with salt, lemon juice and olive oil and mix again.
