Sweet zucchini cake with walnuts and sultanas

This soft and tender pastry with cinnamon and nutmeg is simply delicious. Sweet zucchini cake with walnuts and sultanas is flavorful and juicy. Ingredients

  • 1 tsp butter
  • 350g zucchini
  • 2 eggs
  • 125ml vegetable oil
  • 85g brown sugar
  • 1 tsp vanilla extract
  • 85g walnuts
  • 300g flour
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 140 g raisins, light

Instructions

  1. Preheat the oven to 180°C.
  2. Grease a baking tin with butter.
  3. Roughly grate the zucchini.
  4. Put the eggs, vegetable oil and sugar in a bowl.
  5. Whisk together until smooth.
  6. Vegetables and Add the vanilla extract to the egg mixture.
  7. Mix well.
  8. Roughly chop the walnuts.
  9. Mix together the flour, spices, baking soda, baking powder and sultanas.
  10. Add the flour mixture to the remaining mixture and mix well.
  11. Pour the batter into the baking pan .
  12. Bake the cake for about 1 hour until light brown.
  13. Zucchini cake take it out of the oven and serve with tea or coffee.
