Ingredients

  • 720 g strawberries
  • 520 g rhubarb
  • 500 g preserving sugar, 2:1
  • 1 lemon, untreated

Utensils

  • knife
  • pot
  • mixing spoon

Instructions

  • Wash the strawberries, remove the greens and cut into small pieces.
  • Wash the rhubarb, cut off the ends.
  • Pull off the strands and also cut into small pieces.
  • Put the rhubarb, the strawberries and the preserving sugar in a saucepan bring to a boil.
  • Approx. Cook over low heat for 10-12 minutes.
  • Add grated lemon zest and lemon juice and stir the jam well.
  • Lightly puree or strain the jam and pour into clean, hot mason jars.
  • Turn the jam jars upside down for 5 minutes after sealing to kill any germs on the lid with the heat of the jam.
