Ingredients

  • 1 kg pumpkin
  • 35 ml sunflower oil, for the dough
  • 1-2 tbsp sunflower oil, for rolling out the dough
  • 60-65 ml water, preferably warm
  • 50 g breadcrumbs
  • 1-2 tbsp sugar
  • 170 g flour
  • 1 pinch of salt
  • 1 handful of raisins

Instructions

Mix the dough

  1. , water, flour and salt in a bowl with a spoon.
  2. Then knead the dough with your hands.
  3. Form into a ball of dough.
  4. Put the dough in a bowl in a warm place for 15 to 20 minutes Leave to rest.

Filling

  1. Remove the seeds and fibers from the squash.
  2. Place the raisins in hot water for about 30 minutes.
  3. Grate the squash on a medium grater.

Strudel

  1. The Grease the work surface for rolling out the dough with sunflower oil.
  2. Roll out the dough thinly.
  3. Sprinkle the thin sheet of dough with breadcrumbs.
  4. Distribute the pumpkin evenly over the breadcrumbs, leaving an edge free.
  5. Distribute the raisins evenly over the pumpkin
  6. Sprinkle the strudel with sugar.
  7. Fold in the sides of the pastry and roll up the strudel.
  8. Line the baking tray with baking paper.
  9. Place the strudel on the tray and bake in a preheated oven at 200 degrees for approx. 40-50 minutes.
  10. If desired, the pumpkin strudel can be served with cinnamon and P be sprinkled with icing sugar.
