Stuffed zucchini with parmesan

Stuffed zucchini are easy to make. The pulp of the zucchini is fried with onions, garlic and grated cheese, stuffed into the zucchini and baked in the oven.

  • 4 courgettes
  • salt, to taste
  • pepper, to taste
  • 2 onions
  • 2 cloves of garlic
  • 2 tbsp butter
  • 50g breadcrumbs
  • 50g parmesan
  • 120g mozzarella


  1. Have the courgettes in half lengthwise.
  2. Scrape out the flesh with a spoon.
  3. Chop the flesh into small pieces.
  4. Sprinkle the courgettes with salt and leave to stand for 10 minutes.
  5. Dab the courgettes dry with paper towels.
  6. Place the courgettes in the tin and bake in a preheated oven at 190°C for 8-10 minutes.
  7. Chop the onion and garlic.
  8. Melt the butter in a pan over medium heat.
  9. The onions 4-6 Fry for a few minutes.
  10. Add the garlic and fry for another minute.
  11. Add the pulp, season with salt and pepper. Fry for 4-5 minutes until everything is soft and slightly golden.
  12. Mix the roast with breadcrumbs, grated Parmesan and a portion of grated mozzarella.
  13. Stuff the courgettes with the mixture.
  14. Sprinkle the remaining cheese on top.
