Ingredients

  • 1 zucchini, large
  • ½ onion
  • 1 clove garlic
  • 350g minced beef
  • 1 egg
  • Salt, to taste
  • Black pepper, to taste, chopped
  • 2 tbsp vegetable oil

Instructions

  1. Peel and finely chop the onion and garlic.
  2. Cut the zucchini into ½-2 cm slices.
  3. Remove the core of the vegetables to form rings.
  4. Half the pulp in a bowl with the onion, garlic, minced meat and egg.
  5. Crush the minced meat mixture in a blender.
  6. Season with salt and pepper and mix well.
  7. Heat the vegetable oil in a frying pan.
  8. Place the zucchini rings and fill with the minced meat.
  9. Each ring, 5 minutes on each side Fry until tender.
  10. Serve the stuffed zucchini with a salad.
