Ingredients

  • 4 courgettes
  • 3 tbsp oil, + some for brushing
  • 1 onion
  • 500g minced lamb
  • 300g tomato sauce, or tomatoes in their own juice
  • salt, to taste
  • cayenne pepper, to taste
  • 1 tsp cinnamon
  • 1 tsp ground cumin
  • 1 tsp ground coriander

Instructions

  1. Cut the courgettes in half lengthways.
  2. Scoop out the seeds and the surrounding flesh with a teaspoon.
  3. Place the courgettes in an oiled casserole dish or on a baking sheet.
  4. Drizzle with oil and bake at 220°C for about 15 minutes fry for a long time.
  5. Meanwhile, peel and chop the onion.
  6. Heat 2 tablespoons of oil in a frying pan over medium heat.
  7. Fry the onion for about 5 minutes.
  8. Add the minced meat and cook for another 5 minutes.
  9. The whole thing stir well so that no large pieces remain.
  10. Add the tomato sauce or chopped tomatoes in their own juice and seasonings to the meat.
  11. Stir well and take it off the stove a minute or two later.
  12. Take the zucchini boats out of the oven and use the Fill the minced meat mixture.
  13. Put the filled zucchini back in the oven and bake for another 15-20 minutes.

To ensure that the stuffed courgettes are stable, they can be cut straight from below with a knife.
