Stuffed pike with onions and carrots in the oven

This recipe is really great for a festive occasion. A hearty filling of fish fillet, fried onions and carrots is served directly in the baked fish. The ingredients are mixed together beforehand, pureed and filled into the fish. The result is a delicious meal that also scores points across the board with its unusual appearance.

Ingredients

  • 700-800 g pike, gutted
  • 3 onions
  • 1-2 carrots
  • 2 tbsp vegetable oil + some for brushing
  • 2 slices of baguette
  • 60 ml milk
  • 1 egg
  • 1-2 tbsp mayonnaise
  • 1 tsp lemon juice, fresh
  • salt, to taste
  • black pepper, to taste

Instructions

  1. Rinse the fish under running water and pat dry.
  2. Remove the fish head and rinse well, removing the gills.
  3. Carefully lift the skin at one end and slowly pull it off the fish like a stocking.
  4. Use a knife cut off the fins.
  5. Once you get to the tail fin, cut the spine with a knife or kitchen scissors.
  6. Separate the fish fillet from the bones.
  7. Peel the vegetables.
  8. Cut an onion into small pieces and the rest into rings .
  9. Grate the carrots coarsely.
  10. Heat the oil in a pan over a medium heat.
  11. Fry the finely chopped onions for about 3-5 minutes.
  12. Add the carrots and cook for a further 3 minutes.
  13. Then remove from the heat and allow to cool .
  14. Cut the baguette into small pieces and soak in milk for 7-10 minutes.
  15. Put the fish fillet, the sautéed vegetables and the bread in a bowl.
  16. Add the egg, mayonnaise, lemon juice, salt and pepper.
  17. The Whole with one Crush the hand blender.
  18. Fill the skin of the pike with the mixture.
  19. Put some of it in the head and then carefully stick it onto the fish.
  20. Line the baking tray with baking paper.
  21. Place the onion rings on top and brush with oil.
  22. Place the fish on top and brush it lightly with oil as well.
  23. Bake the stuffed pike for about 45 minutes at 180°C and then serve immediately.
