Ingredients

  • 3 peppers
  • 125g bacon, diced
  • 1 onion
  • 1-2 tbsp vegetable oil
  • 50-70g cheese
  • Salt, to taste
  • Black pepper, to taste
  • 3 eggs

Instructions

  1. Cut the tops off the peppers and carefully remove the seeds.
  2. Add the vegetables to the boiling water and simmer gently for 5 to 6 minutes.
  3. Then remove, place on a plate, allow to cool and pat dry.
  4. Dice the bacon and fry in a dry pan until crispy.
  5. Peel the onion, cut into small pieces and fry in the oil for 5-6 minutes.
  6. Let both cool slightly.
  7. Then mix with the grated cheese, salt and black pepper.
  8. Stuff the peppers with the mixture, making a well for the eggs.
  9. Carefully crack an egg into each pepper.
  10. Season with salt.
  11. Bake the peppers in a baking tin at 200°C for about 20-25 minutes.
  12. Take the stuffed peppers out of the oven with the egg and bacon and serve immediately.

The cut off pepper tips can also be prepared and arranged with the peppers when serving.
