Stuffed peppers with couscous and feta cheese

Tasty and very tasty stuffed peppers with couscous is a good idea for lunch or a light and healthy dinner. Stuffed peppers with couscous is an interesting option for stuffed vegetables. Ingredients

  • 175 g couscous
  • 4 red peppers
  • 4 yellow peppers
  • 100 sun-dried tomatoes, in a jar
  • 75 g olives, pitted
  • 175 g feta cheese
  • 50 g pine nuts
  • 1 garlic cloves
  • salt, to Flavor
  • Pepper, to taste
  • Olive oil, to taste
  • Basil, for garnish

Instructions

  1. Have the peppers in half and deseed them.
  2. Simmer in the oven at 180 degrees for about 10-15 minutes.
  3. Let the couscous swell in boiling salted water for 3-5 minutes.
  4. Roast the pine nuts in a pan.
  5. Feta cheese, dried Mix together the tomatoes, pine nuts, olives and garlic.
  6. Season with salt and pepper and drizzle with a little olive oil.
  7. Stuff the couscous mixture into the pepper halves.
  8. Bake the stuffed peppers in the oven for a further 15 minutes.
  9. Garnish the stuffed peppers with a basil leaf and Enjoy warm.
