Stuffed mussel pasta with spinach and ricotta in the oven

Stuffed pasta shells with spinach and ricotta simply taste delicious straight out of the oven. First, the pasta is pre-cooked and then filled with the mixture of fried spinach, garlic, ricotta and breadcrumbs. Just prepare the sauce from the remaining ingredients and then pour the whole thing into a casserole dish. Topped with mozzarella in the oven, it makes a hearty and delicious meal that’s great for lunch or dinner.

Ingredients

  • 250g mussel pasta
  • 2-3 tbsp vegetable oil
  • 7 cloves garlic
  • 180g spinach
  • 500g ricotta
  • 1-2 tbsp breadcrumbs
  • Salt, to taste
  • Black pepper, to taste
  • 1 chili pepper
  • 500 g tomatoes
  • 1 tbsp tomato puree
  • sugar, to taste
  • 120 g mozzarella
  • cherry tomatoes, to taste, optional

Instructions

  1. Cook pasta until al dente. Note the time on the package.
  2. Remove from heat, drain water, and allow to cool.
  3. Peel the garlic.
  4. Heat a tablespoon of oil in a skillet over medium-high heat.
  5. Add a chopped garlic clove, stirring for 30 seconds sauté.
  6. Add the spinach in batches, stirring well each time.
  7. Once all the spinach leaves have wilted, remove from the heat and allow to cool.
  8. Mix the spinach with the ricotta, breadcrumbs, salt and pepper.
  9. Gently fill the pasta with the mixture.
  10. Cut the tomatoes into small pieces.
  11. Chop the chili and the remaining garlic.
  12. Heat the oil in another frying pan.
  13. Add the chili and garlic and sauté briefly.
  14. Add the tomatoes, tomato puree, salt and sugar.
  15. Be Fry over a low heat for approx. 15 minutes while stirring.
  16. Pour the sauce into a casserole dish, spread evenly.
  17. Spread the filled pasta and, if desired, halved cherry tomatoes on top.
  18. Sprinkle with coarsely grated mozzarella.
  19. Add to the bac Place in the oven and bake for approx. 20 minutes at 180°C.
  20. Remove the filled pasta from the oven and serve hot.

Tip

Large noodles or the large clam noodles are perfect for this recipe.
