Ingredients

  • 6 mushrooms
  • 1/2 avocado
  • 1/2 red peppers
  • 4-6 cherry tomatoes
  • basil, fresh
  • dill, fresh
  • 20 g spring onions
  • 2 garlic cloves
  • 1 tbsp soy sauce
  • 100 g grated mozzarella

Utensils

  • knife
  • mushroom brush
  • cutting board
  • bowl
  • casserole
  • spoon

Instructions

  1. Clean the mushrooms and break off the stalks.
  2. Slightly hollow out the heads of the mushrooms.
  3. Chop the mushroom stalks into small pieces.
  4. Dice the avocado into small cubes.
  5. Cut the spring onions into fine rings and chop the garlic into small pieces.
  6. Chop the peppers and tomatoes into small pieces.
  7. Mix the mushroom stalks, peppers, tomatoes, spring onions, garlic and diced avocado in a bowl.
  8. Season with 1 tbsp soy sauce.
  9. Stuff the mushrooms with the mixture and place in a casserole dish.
  10. Sprinkle with the cheese and bake in the oven at 200 degrees Bake for approx. 20 minutes.
  11. Garnish the stuffed mushrooms with basil and dill and serve.
