Ingredients

  • 4 mushrooms, large
  • 2 garlic cloves
  • 3-4 stalks chives
  • 2 tbsp butter
  • 65 g spinach
  • 120 ml whipping cream
  • ¹⁄₄ tsp salt
  • ¹⁄₄ tsp pepper
  • 50 g Cheddar, or other hard cheese
  • 1 tbsp lemon juice
  • 3 tbsp breadcrumbs
  • 1 tbsp oil
  • 25g parmesan
  • ¹⁄₄ tsp paprika

Utensils

Instructions

  1. Preheat the oven to 180°C.
  2. Remove the stems from the mushrooms and chop finely.
  3. Chop the garlic and onion.
  4. Melt the butter in a pan over medium heat.
  5. Slice the mushroom stems with the Sauté the garlic and onions for 3-4 minutes, stirring frequently.
  6. Add the spinach, cream, salt, pepper and grated cheddar.
  7. Simmer for an additional 3-4 minutes, stirring.
  8. Add the lemon juice.
  9. Slice the mushroom caps Place the baking tray and spread the filling on it.
  10. Mix the breadcrumbs with the oil, grated Parmesan and paprika powder.
  11. Spread the mixture over the mushrooms.
  12. Bake the stuffed mushrooms for 15-20 minutes at 180°C until golden brown.
