Turkish-style aubergines are filled with juicy meat, tomatoes, onions, peppers and garlic and then baked in the oven. Flavorful, filling, aromatic and very tasty, this dish is really unusual and definitely worth trying.

Ingredients

  • 6 aubergines
  • 90 ml vegetable oil
  • 2 onions
  • 5 cloves garlic
  • 250 g minced meat
  • 1 tomato
  • 1 paprika
  • Salt, to taste
  • Black pepper, to taste
  • 5 tbsp tomato paste
  • 250 ml water

Instructions

  1. Peel the aubergines lengthwise in wide strips so that the light and dark parts alternate.
  2. Put the aubergines in a bowl of salted water and leave to stand for 30 minutes.
  3. Rinse then, pat dry with paper towels.
  4. Heat 60 ml oil in a frying pan.
  5. Fry the vegetables on all sides over a medium heat.
  6. Remove and let cool.
  7. Peel the onions and garlic.
  8. Finely chop the onions and chop the garlic.

A minced meat mixture of beef and lamb tastes best with this dish. Alternatively, minced beef or minced lamb can also be used.
