Spicy glass noodle salad with mushrooms

In this delicious glass noodle salad, the usual ingredients such as carrots and peppers are complemented by the fried mushrooms. The salad is light, fresh and super tasty. The garlic and soy sauce give it a slightly sweet and sour taste and a spicy, savory aroma. The glass noodle salad can be served warm as a main course or chilled as a starter or salad.

Ingredients

  • 400-450 g mushrooms
  • 2 peppers
  • 1-2 carrots
  • 3-4 cloves garlic
  • 6-7 tbsp oil
  • 200 g glass noodles
  • Black pepper, to taste
  • 6-8 tbsp soy sauce
  • sesame, to taste

Instructions

  1. Wash and clean the mushrooms, peppers and carrots.
  2. Cut the mushrooms into large pieces, the peppers into strips and the carrots into wedges.
  3. Peel the garlic and chop finely.
  4. Heat 2 tablespoons of oil in a wok pan.
  5. The Fry the carrots in it for 2-3 minutes and remove.
  6. Add 2 more tablespoons of oil to the pan and heat up.
  7. Fry the peppers in it for about 5 minutes and remove as well.
  8. Pour the remaining oil into the pan and sauté the mushrooms Fry until all the liquid has evaporated.
  9. Meanwhile, cover the glass noodles with hot water.
  10. Approx. Leave to stand for 5-7 minutes and drain.
  11. Return the carrots and peppers to the pan.
  12. Season with the black pepper and add the garlic.
  13. Stir for about 1 minute.
  14. Add the glass noodles and soy sauce, mix well .
  15. Increase the heat slightly and warm the dish for 2-3 minutes.
  16. Before serving, sprinkle the glass noodle salad with sesame seeds.
