Spanish chocolates with egg yolk, simple syrup and citrus flavor
Ingredients
- 90 ml water
- 100 g sugar
- 6 egg yolks
- 100-150 g icing sugar, for rolling
- 1 tsp lemon zest, grated

Instructions
- Mix the water and sugar together in a small saucepan.
- Then bring the mixture to a boil.
- Let the syrup simmer for 5-6 minutes until thickened.
- Stir the mixture occasionally.
- Add the lemon zest.
- In another saucepan, lightly whisk the egg yolks.
- Pour the hot syrup over the egg yolks, stirring constantly.
- Cook the egg mixture on the lowest setting for 3-4 minutes.
- In the process use a whisk to stir constantly.
- As soon as the batter begins to pull away from the sides and bottom of the pot, remove the pot from the heat.
- Pour the batter onto a plate and let cool slightly.
- Differently dust the candy with powdered sugar Sprinkle.
- Next, form small pralines into balls with your hands.
- Roll the pralines in icing sugar and place in praline capsules.
- Place the dessert in the fridge for 2-3 hours to cool.
