Seared sea bass with broccoli puree

Seared sea bass with broccoli puree is original and delicious. The addition of cream makes the puree very tender and complements the spicy fish wonderfully. Preparation is very simple, the dish is ready in less than half an hour. Boil the broccoli in salted water for a few minutes, then mix with the remaining ingredients in a stand mixer. Rinse the fish fillets, pat dry and fry in hot oil. Just arrange both on a plate and the dish can be served.

Ingredients

  • 400g broccoli
  • Salt, to taste
  • 20-30g butter
  • 2-3 tbsp cream
  • Black pepper, to taste
  • 1 clove of garlic
  • 2 sea bass fillets
  • 1 tbsp vegetable oil

Utensils

  • cooking pot
  • strainer
  • garlic press
  • stand mixer
  • paper towels
  • sauté pan

Instructions

  1. Put the broccoli florets in a saucepan and cook in lightly salted water for approx. 6-8 minutes.
  2. Then rinse in a sieve.
  3. Peel the garlic and press through a garlic press.
  4. Broccoli, butter, cream, salt, pepper and garlic in a stand mixer.
  5. Rinse fillets under running water, pat dry with paper towels.
  6. Salt on both sides.
  7. Heat oil in a frying pan over medium-high heat.
  8. Place fillets skin-side down.
  9. Fry for about 3 minutes.
  10. Then turn carefully, sauté for a further 2 minutes.
  11. Remove the sea bass from the pan and arrange on a plate with the broccoli puree.

Fresh herbs and other vegetables can be added to the dish if desired.
