Seared sea bass with broccoli puree
Ingredients
- 400g broccoli
- Salt, to taste
- 20-30g butter
- 2-3 tbsp cream
- Black pepper, to taste
- 1 clove of garlic
- 2 sea bass fillets
- 1 tbsp vegetable oil
Utensils
- cooking pot
- strainer
- garlic press
- stand mixer
- paper towels
- sauté pan
Instructions
- Put the broccoli florets in a saucepan and cook in lightly salted water for approx. 6-8 minutes.
- Then rinse in a sieve.
- Peel the garlic and press through a garlic press.
- Broccoli, butter, cream, salt, pepper and garlic in a stand mixer.
- Rinse fillets under running water, pat dry with paper towels.
- Salt on both sides.
- Heat oil in a frying pan over medium-high heat.
- Place fillets skin-side down.
- Fry for about 3 minutes.
- Then turn carefully, sauté for a further 2 minutes.
- Remove the sea bass from the pan and arrange on a plate with the broccoli puree.
Fresh herbs and other vegetables can be added to the dish if desired.
