Sauce with pears

A thick sauce with pears has a fine fruity taste and a spicy herbal aroma. The sauce is flavored with shallots and garlic and is the perfect accompaniment to poultry, pork and lamb dishes.

  • 4 pears
  • 120ml olive oil
  • 2 shallots
  • 6 garlic cloves
  • 2 tbsp water
  • 2 sprigs thyme, or rosemary
  • 900ml chicken stock
  • 2 tbsp balsamic vinegar
  • salt, to taste


  1. Preheat the oven to 220°C.
  2. Line the baking tray with baking paper.
  3. Wash the pears, halve lengthwise and remove the cores.
  4. Gross the pears with 2 tablespoons of olive oil.
  5. Place the cut side down on the baking tray .
  6. Peel the shallots and garlic cloves, chop the onions roughly.
  7. Wrap both lightly in aluminum foil and add water and 2 tablespoons olive oil.
  8. Bake the pears, shallots and garlic in the oven at 220° C for approx. 20-30 minutes until they are are soft.
  9. Chop the herbs finely and place in a saucepan.
  10. Add the pears, shallots, garlic, chicken broth, balsamic vinegar and the remaining olive oil and mix together.
  11. Simmer the sauce over low heat for approx. 20-30 minutes until until it is reduced by half.
  12. Then finely chop the sauce with a hand blender and season with salt.
  13. Serve the fruity sauce with pears with poultry, pork and lamb dishes.
