Ingredients

  • 600-700 g pork tenderloin
  • Salt, to taste
  • Pepper, to taste
  • 1 onion
  • 3-4 tbsp mustard, grainy
  • 50 g brown sugar
  • 1-2 tsp thyme, dried

Utensils

  • bowl
  • spoon
  • knife
  • cutting board
  • oven dish

Instructions

  1. Rinse the pork fillet thoroughly and pat dry.
  2. Rub with salt and pepper.
  3. Mix the mustard with sugar and thyme in a small bowl.
  4. Rub the pork fillet with it on all sides.
  5. Approx. Leave to marinate for 10-15 minutes.
  6. Peel the onions, rinse and cut into rings.
  7. Preheat the oven to 180°C top/bottom heat.
  8. Double a piece of aluminum foil.
  9. Spread the onions on the foil.
  10. Place the pork fillet on the onions and wrap in the foil, not too tightly.
  11. Place the meat in an oven dish and bake in the preheated oven for approx. 40-45 minutes.
  12. Remove the dish from the oven and uncover the meat from above .
  13. Put back in the oven.
  14. Bake for about 10-15 more minutes until the top of the fillet is slightly golden brown.
  15. Let the roast pork rest in the foil for about 10-15 minutes before serving.
  16. Slice the meat and serve with vegetables.
