Ingredients

  • 2 chicken thighs
  • 1500-2000 ml water
  • 1 tbsp vegetable oil
  • 1 onion
  • 1 stalk celery
  • 3 cloves garlic
  • 3 tbsp flour
  • ⅓ tsp Italian herbs
  • 150 g rice
  • 3-4 Potatoes
  • 1 carrot
  • 250 ml cream
  • Salt, to taste
  • Black pepper, to taste
  • Herbs, to taste

Instructions

  1. Pour water over the chicken and cook until tender, about 40-45 minutes.
  2. Strain the broth and cut the meat into pieces.
  3. Heat the oil in a saucepan over medium-high heat.
  4. Peel all the vegetables.
  5. Onion and chop the garlic.
  6. Don’t chop the celery, potatoes and carrots too coarsely.
  7. Add the onion and celery to the hot oil.
  8. Fry for 5-7 minutes.
  9. Add the garlic and cook for a further 30 seconds.
  10. Add the flour, stir well and simmer for another minute.
  11. Pour in the broth in a thin stream, stirring constantly.
  12. Add the Italian herbs, rice, potatoes, carrots and cream.
  13. Bring the mixture to a boil.
  14. Reduce heat to minimum, cover pot and simmer for 20 minutes.
  15. Add chicken to soup, season with salt and pepper.
  16. Cook soup for another 5-6 minutes.
  17. Sprinkle chopped herbs over chicken soup and remove from heat.
