Rice sushi burger with scampi in tempura batter

Rice sushi burger with scampi in traditional Japanese tempura batter. The rice burger is delicious. With a delicate sauce and delicious fried scampis, fresh lettuce leaves, it is simply delicious.

Sushi burger

  • 150 g rice, for sushi
  • 200 ml water
  • salt, to taste

Tempura scampi

  • 250 g flour
  • salt, to taste
  • 2 eggs
  • 100 water, cold
  • 8 Scampi
  • 100 ml vegetable oil

Burger ingredients

  • 4 tbsp mayonnaise
  • 1½ tbsp ketchup
  • ½ tbsp honey
  • 1 tsp wine vinegar
  • 4-8 leaves lettuce
  • 2 tbsp sesame seeds


  1. Rinse the rice several times with cold water.
  2. Place in a saucepan, add water and salt.
  3. Bring the lid to a boil.
  4. Reduce the heat and simmer for 12 minutes.
  5. Cook the rice with the lid closed allow to cool.

tempura dough

  1. Put 200 g of flour in a bowl, salt and stir.
  2. Make a well in the center and break in the eggs.
  3. Pour in cold water and mix everything until there are no lumps.
  4. Cover the bowl and put in the fridge for 15 minutes.
  5. Peel the scampis.
  6. Heat the vegetable oil in a deep wok pan.
  7. Put the remaining flour in a small bowl.
  8. Dunk the shrimp into the tempura batter with tongs and in the Coat in flour.
  9. Fry the shrimp in hot oil in a wok over medium-high heat until golden brown.
  10. Place the fried shrimp on paper towels to degrease them.

Sushi Burger

  1. For the sauce: mayonnaise, ketchup, honey and wine vinegar in a tall vessel.
  2. With blend with a hand blender.
  3. Divide the rice into eight equal parts.
  4. Form each piece into a round rice burger. It is best to use a burger press.
  5. Place 1-2 lettuce leaves and 2 shrimp on four rice burgers.
  6. Drizzle with the prepared sauce and cover with the remaining rice burgers.
  7. Roast the sesame seeds for 1-2 minutes in a dry pan and cover sprinkle the finished sushi burgers.
