Ingredients

Base

  • 70 g almonds
  • 80 g dates, pitted
  • 1 tbsp peanut butter

Filling

  • 250 g quark
  • 50 g icing sugar
  • 1 orange
  • 4-5 kiwifruit
  • berries, optional

Utensils

  • stand mixer
  • mixing bowl
  • hand mixer
  • springform pan
  • knife
  • sieve
  • cutting board

Instructions

Base

  1. Roast the almonds in a dry pan.
  2. In a blender, grind to a fine almond paste.
  3. Add the dates and peanut butter to the almonds.
  4. Mix everything together until you have a firm dough.
  5. When the dough is crumbly, add some juice, milk or more peanut butter.
  6. Spread the batter into a springform pan, lifting up a rim.
  7. Refrigerate the springform pan for at least 1 hour.

Filling

  1. Peel the orange, in a stand mixer chop and pass through a sieve.
  2. Mix the quark with powdered sugar in a bowl.
  3. Add the orange puree and stir again.
  4. Spread the quark mixture over the cooled base.
  5. Put the quark cake back in the fridge.
  6. Peel the kiwi , halve lengthways and slice thinly.
  7. Roll up the kiwi slices so they look like roses.
  8. Top the quark cake with kiwi roses and berries as desired.
