Refreshing currant ice cream with whipped cream and vanilla

Refreshing dessert made from currants and cream with a pleasant acidity and fruity taste.

Ingredients

  • 500 g currants, preferably black berries
  • 150 g sugar
  • 300 ml whipping cream, cold
  • 1 tsp vanilla extract

Instructions

  1. Place the currants in a saucepan and bring to a boil over medium-high heat.
  2. The currants will soften and can be strained through a sieve.
  3. While the berry mixture is still warm, dissolve the sugar in it and let it cool.
  4. Add vanilla extract.
  5. Whip cold cream with a mixer until stiff.
  6. Pour the cream into the berry mixture and mix gently.
  7. Pour the berry mixture into a container and place in the freezer for at least 2 hours.
  8. The ice cream 20-30 Minutes before serving, remove from the freezer.
  9. Use an ice cream scoop to fill the currant ice cream into dessert bowls and enjoy with a waffle.
