Ingredients

  • 1 onion
  • 1-2 carrots
  • 2-3 potatoes
  • 90 g mushrooms, white
  • 1-2 sprigs spring onions
  • salt, to taste
  • 2 bay leaves
  • rosemary, dried, or thyme to taste
  • vegetable oil

Instructions

  1. Boil 2 liters of water in a saucepan.
  2. Chop the vegetables and mushrooms.
  3. Add the carrots and potatoes to the water.
  4. Add the salt, bay leaves and dried herbs.
  5. After a few minutes, add the onions.
  6. Then add the mushrooms.
  7. Bring the soup to a boil.
  8. Simmer over low heat for another 5-7 minutes.
  9. Add a little olive oil to the prepared soup.
  10. Add the finely chopped spring onions.
  11. 2-3 Let steep under the closed lid for a few minutes.
