Quick and easy pumpkin dessert with lemons, honey and cinnamon
Ingredients
- 500 g pumpkin
- 1 lemon
- 1 tbsp sugar
- 1 tbsp honey
- 1 tsp cinnamon
- ¼ tsp nutmeg, ground

Instructions
- Peel the pumpkin and cut into small cubes.
- Finely grate the lemon zest.
- Squeeze the juice out of the lemon.
- Mix the lemon juice with lemon zest, sugar, honey, cinnamon and nutmeg in a bowl.
- Pour the syrup over the pumpkin and mix well.
- Place the pumpkin in a microwave-safe casserole dish.
- Cook the pumpkin in the microwave on maximum power for 3 to 5 minutes until the fruit is tender.
- The microwave pumpkin dessert warm or cold with ice cream or Greek yoghurt serve.
