Ingredients

  • 500 g pumpkin
  • 1 lemon
  • 1 tbsp sugar
  • 1 tbsp honey
  • 1 tsp cinnamon
  • ¼ tsp nutmeg, ground

Instructions

  1. Peel the pumpkin and cut into small cubes.
  2. Finely grate the lemon zest.
  3. Squeeze the juice out of the lemon.
  4. Mix the lemon juice with lemon zest, sugar, honey, cinnamon and nutmeg in a bowl.
  5. Pour the syrup over the pumpkin and mix well.
  6. Place the pumpkin in a microwave-safe casserole dish.
  7. Cook the pumpkin in the microwave on maximum power for 3 to 5 minutes until the fruit is tender.
  8. The microwave pumpkin dessert warm or cold with ice cream or Greek yoghurt serve.
