Oatmeal muffins with raisins and brown sugar

Ingredients

  • 120g raisins
  • 120ml vegetable oil, + some for brushing
  • 2 eggs
  • 150g brown sugar
  • 120ml sour milk
  • 180g flour
  • 80g rolled oats
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 pinch of salt

Instructions

  1. Preheat the oven to 190°C.
  2. Grease 12 muffin cases with oil.
  3. Soak the raisins in boiling water for about 3-4 minutes.
  4. Then drain off the water and dry well.
  5. In a bowl, put the eggs and sugar whisk thoroughly.
  6. Pour in the oil and milk and mix well.
  7. Add the flour, rolled oats, baking powder, baking soda and salt to the liquid ingredients.
  8. Mix well, stir in the raisins.
  9. Shake about ¾ of the Fill batter.
  10. Bake the oat muffins for about 17-20 minutes until golden.
  11. Then remove from the oven, serve warm or chilled.

Brown sugar adds caramel flavor and color to the muffins, but white sugar can be substituted. If no sour milk is available, low-fat kefir can be used instead. Alternatively, normal milk is also suitable, which is mixed with a teaspoon of lemon juice and left to stand for about 5-10 minutes.
