No-bake tiramisu cake with mascarpone and strawberries

The recipe for tiramisu cake with mascarpone and strawberries is very simple and requires no baking. The fresh strawberries, the creamy mascarpone cream and the soft ladyfingers go together perfectly.

Ingredients

  • 1.4 kg strawberries
  • 350 g mascarpone
  • 150 g sugar
  • 400 g ladyfingers
  • 6 egg yolks
  • 1 lemon
  • 1 tsp vanilla extract
  • Mint, optional

Instructions

Prepare the strawberries

  1. Squeeze the juice from one lemon in the citrus juicer.
  2. Rinse and slice 1 kg of the strawberries.
  3. Place the strawberries in a pan without oil.
  4. Add 2 tablespoons of water, sugar and lemon juice.
  5. Fry for 3 minutes over high heat.
  6. Let the strawberries cool.
  7. Strain the strawberry syrup and set aside for the cream.

Whisk the mascarpone cream

  1. Using a hand mixer, mix the egg yolks with the sugar and vanilla essence until the sugar has dissolved .
  2. Add the mascarpone and stir well.

Layer the tiramisu cake

  1. Two differently sized cake rings are used for the tiramisu.
  2. The outer cake ring is 22 cm in diameter and the inner cake ring is 18 cm in diameter.
