No bake cake with dates

No bake cake is an unusually delicious cake based on dates, cashews and pecans. Topped with pieces of juicy kiwi fruit, it simply tastes wonderful.

  • 300g cashew nuts
  • 220g pitted dates
  • 120g pecans, or walnuts
  • 35g coconut chips
  • 50g coconut oil + 1 tablespoon
  • 1 pinch salt
  • 4-5 limes
  • 120ml coconut milk
  • 120 ml maple syrup
  • ½ avocado
  • 1 tsp vanilla extract
  • 4-5 kiwis


  1. Cashews in a bowl, cover with hot water and leave for an hour. Then drain off the liquid.
  2. In a blender, chop the dates together with the pecans, coconut flakes, a tablespoon of coconut oil and a pinch of salt.
  3. Line a cake tin with baking paper and pour the cake mixture into the tin. Flatten the nut mass with a spoon.
  4. Squeeze out 180 ml of the lime juice.
  5. Whisk the cashews, coconut milk, 50 g coconut oil, maple syrup, avocado and vanilla on the highest setting.
  6. Spread the mass over the date mass and bake for 1 to Place in the freezer for 2 hours.
  7. Slice the kiwi and top the cake.
  8. Replace in the fridge for an additional hour.

Walnuts can also be used in place of pecans. You can also just keep the cake in the fridge, but it tastes better frozen!
