Mushroom soup with potatoes and minced meat

This mushroom soup is quick and easy to make. The soup is very tasty with minced meat, potatoes, zucchini and leek and is deliciously refined with melted herb cheese.

  • 200 g minced meat
  • 2 potatoes, medium-sized
  • 1 zucchini, small
  • 6 mushrooms, large
  • 1 leek
  • 200 g processed cheese, herbs
  • 1 cube of vegetable stock
  • sunflower oil, to taste
  • salt, to taste
  • pepper, to taste
  • 1 ½ l water


  1. Cut the leek into rings.
  2. Dice the potatoes and zucchini into large cubes.
  3. Clean the mushrooms and quarter them depending on their size.
  4. Fry the minced meat in a pan with a little oil.
  5. The zucchini, the potatoes , add the mushrooms and the leek rings to the mince and sauté as well.
  6. Prepare the broth with water and use it to deglaze the minced vegetables.
  7. Bring everything to the boil and cook until the vegetables are done.
  8. Finally with herb melted cheese Round off and add the mushrooms, season if necessary and bring to the boil briefly.
