Muffins with currants and oatmeal

Summer is already in full swing and berry season is here! The sweet muffins with black and red currants taste deliciously fruity and invite you to a cozy round of tea or coffee outside.

Ingredients

  • 1 cup currants, black or red
  • 200 g flour
  • 50 g rolled oats, ground
  • 150 g sugar
  • 1 egg
  • 200 ml milk
  • 80 g butter, melted
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon powder
  • 1/2 tsp salt

Instructions

  1. In a large bowl, sift all of the dry ingredients: flour, baking powder, salt, cinnamon, sugar, and rolled oats and mix well.
  2. In a separate bowl, mix together the egg, milk, and butter.
  3. Pour the liquid mixture into the dry ingredients Stir in, the batter may be lumpy and does not need to be stirred for long.
  4. Carefully mix the berries into the batter.
  5. Pour the batter into the muffin cases.
  6. Bake the muffins in the oven at 200°C for about 25 minutes.
  7. The Sprinkle the cooled berry muffins with powdered sugar and enjoy with a cup of milk!
