Ingredients

  • 1 egg
  • 50 g sugar
  • 180 g kefir, or buttermilk
  • 1 tsp lime zest
  • 200 g flour
  • 1/2 p. Baking powder
  • 40 g grated coconut
  • 100 g raspberries
  • 20 g sugar, for sprinkling
  • 75 g rhubarb
  • 35 g flaked almonds, for sprinkling
  • 100 g cream, for soaking

Utensils

  • Square baking dish
  • Bowl
  • Hand mixer
  • Spatula
  • Spoon

Instructions

  • Preheat the oven to 200°C.
  • In a mixing bowl, beat the egg and sugar.
  • Mix the flour with the baking powder in a bowl.
  • Pour the kefir or buttermilk, lime zest and the flour mixture into the egg and sugar mixture stir.
  • Cut the rhubarb into small pieces.
  • Mix the coconut flakes with the flaked almonds and sugar.
  • Line a small baking tin with baking paper.
  • Pour the batter into the baking tin and spread evenly using a spatula.
  • The rhubarb and raspberries Spread over the dough.
  • Spread the coconut mixture over the dough.
  • Bake the buttermilk cake at 200°C for approx. 20-25 minutes.
  • Remove the cake from the oven.
  • Spread the cream evenly over it.
  • Den Leave the buttermilk cake to cool and cut into small slices.
