Ingredients

  • 500 g calamari, peeled
  • 80 ml lemon juice
  • 80 ml olive oil
  • 1-2 sprigs of parsley
  • 1 clove of garlic
  • Lemon zest to taste

Utensils

  • knife
  • cutting board
  • pan
  • glass jar
  • sieve
  • bowl
  • grater
  • lemon squeezer

Instructions

  1. Cut the squid into rings or small pieces and place in a saucepan.
  2. Cover with boiling water and cook for no more than a minute.
  3. Then drain in a colander.
  4. Finely grate the zest of the lemon and squeeze the lemon.
  5. Place the seafood in a glass jar.
  6. Add the lemon juice and oil mixture.
  7. Cover the lid and leave to cool.
  8. Refrigerate the jar for 10-12 hours.
  9. Peel and chop the garlic.
  10. Place the squid in a bowl.
  11. Mix in the chopped herbs and chopped garlic.
  12. Sprinkle over the grated lemon zest.
  13. Serve the marinated calamari with the lemon juice and parsley.
