Ingredients

  • 200 g cheese
  • 2 tbsp white wine vinegar
  • 300 g butter
  • 3 egg yolks
  • 2 tbsp lemon juice
  • salt, to taste
  • pepper, to taste

Utensils

  • cheese grater
  • pot
  • bain-marie bowl
  • spoon
  • whisk

Instructions

  1. Grate the cheese and melt the butter.
  2. In a saucepan, evaporate 4 tablespoons of water, 2 tablespoons of vinegar, a pinch of salt and a pinch of pepper to 2/3.
  3. In a water bath, mix the egg yolks with the cheese and the melted butter Mix until creamy.
  4. Season the dip with lemon juice and let it cool down.
  5. Serve the cheese dip with vegetable sticks or chips.
