Ingredients

  • 1 kg plums
  • 1 l water
  • 200 g sugar

Instructions

  1. Place the plums in a wide bowl.
  2. Leave in a sunny spot for 3 days.
  3. Remove the pits from the plums.
  4. Crush the flesh of the plums with a wooden masher.
  5. Pour the pureed plums into a glass and cover with water.
  6. Stir with a wooden spatula.
  7. Cover the plums with a cheesecloth.
  8. Leave to stand in a dark place at a temperature of 18-25 °C.
  9. Stir several times a day.
  10. After approx 2 days the fermentation process starts: bubbles appear on the surface and it smells slightly sour.
  11. Add sugar and stir.
  12. Pour the wine mass into clean glasses ⅔ fill.
  13. Close the glasses with hydrolock for wine.
  14. The wine leave in a dark place.
  15. After 45 days, strain the wine without touching the sediment at the bottom and pour into wine bottles.
  16. Cork the bottles and leave in a cool place for another 2-3 months.
