Lokum is a Turkish sweet known all over the world today. It is made from sugar, cornstarch and fruit or berry juice. Sometimes chopped nuts, almonds, pistachios or pureed apricots are also added. The mass is transparent yellowish or slightly pink, but can also be of different colors. Lokum is soft, sticky, tastes wonderfully delicious and means “joy” in Turkish.

Ingredients

  • 375 ml water
  • 250 ml fruit juice, or berry juice
  • 140 g cornstarch, + 3 tbsp
  • 200 g sugar
  • 1 tbsp powdered sugar

Utensils

  • Kitchen scales
  • Measuring cups
  • Casserole
  • Wooden spoons
  • Knife
  • Square baking dish
  • Bowl

Instructions

  1. In a saucepan, bring the water, sugar, and juice to a boil over medium heat until the sugar dissolves.
  2. While stirring constantly with a wooden spoon, add the starch.
  3. Simmer over low heat for 15 minutes, until the liquid turns light golden and thickens.
  4. Add enough red food coloring to turn the liquid pink.
  5. As the water evaporates as it cooks, the mixture will be jelly-like and very chewy.
  6. Remove the saucepan from the heat.
  7. Make a rectangular baking or line the casserole dish with cling film or lightly oil it.
  8. Pour the Lokum mixture into the dish and smooth it out.
  9. Let it cool at room temperature for about 1.5 hours.
  10. Mix the remaining cornstarch with the icing sugar in a flat bowl.
  11. Remove the Lokum from the mold and cut into cubes with a sharp knife.
  12. To prevent the Lokum cubes from sticking together and sticking to your fingers, roll them well on all sides in the icing sugar mixture n.

Store Lokum in an airtight container until ready to eat.
