Light zucchini salad with rocket, feta and lemon dressing
Ingredients
- 1 lemon, unwaxed
- 4 tbsp olive oil
- 2-3 courgettes
- salt, to taste
- pepper, to taste
- 120-180 g arugula
- ½ bunch herbs, to taste
- 50-80 g feta

Instructions
- Grab the lemon zest on a fine grater.
- Squeeze the lemon juice and stir together with the lemon zest and olive oil.
