Ingredients

  • 1 lemon, unwaxed
  • 4 tbsp olive oil
  • 2-3 courgettes
  • salt, to taste
  • pepper, to taste
  • 120-180 g arugula
  • ½ bunch herbs, to taste
  • 50-80 g feta

Instructions

  1. Grab the lemon zest on a fine grater.
  2. Squeeze the lemon juice and stir together with the lemon zest and olive oil.
  3. Rinse and thinly slice the courgettes.
  4. Season with the lemon dressing you prepared, salt and pepper.
