Light strawberry roll with meringue and whipped cream

This strawberry roll with meringue tastes light and fluffy and is ideal for hot summer days. The fruity strawberries and the fluffy cream with coconut flakes complement the meringue wonderfully.

  • 5 egg whites
  • 1 pinch of salt
  • 250 g sugar


  • 500 ml whipped cream
  • 2 tbsp vanilla sugar
  • 1 tbsp coconut flakes
  • 2 packets of whipped cream
  • 300 g strawberries


  • 4- 5 strawberries
  • mint leaves, optional


Bake the meringue

  1. Preheat the oven to 180 °C.
  2. Line a baking tray with baking paper.
  3. Beat the egg whites with a pinch of salt until fluffy.
  4. Gradually stir in the sugar.
  5. Pour the egg white mixture onto the tray and spread evenly and smooth out.
  6. Bake in the oven for 15 minutes at 180 °C.
  7. Then turn the meringue out onto a kitchen towel and let it cool, covered.

Prepare the cream

  1. Whip the cream with the vanilla sugar, coconut flakes and cream stiffener.
  2. Cream until stiff Spread the baked meringue, leaving the edges free. Chill some cream for garnish.
  3. Chop the strawberries into small pieces and spread on the cream.
  4. Roll up the meringue carefully and chill for 1 hour.
  5. Place the strawberry roll on a plate.
  6. With the remaining cream, some strawberries and mint leaves garnish.
