Ingredients

  • 125 g butter
  • 3 eggs
  • 70 g icing sugar
  • 120 g flour
  • 30 g cornstarch
  • ½ p. Baking powder
  • 2 tbsp baking cocoa
  • 80 ml eggnog
  • 800 g plums
  • icing sugar

Instructions

  1. Have the plums in half and stone them.
  2. Separate the eggs.
  3. Beat the egg whites until stiff.
  4. Stir the softened butter with the egg yolks and powdered sugar until creamy.
  5. Stir in the flour mixed with the baking powder, starch and eggnog.
  6. Fold in the beaten egg whites.
  7. Put half of the batter into a greased baking tin.
  8. Stir the cocoa powder into the other half of the batter.
  9. Distribute the dark batter over the light batter and smooth out with a spatula.
  10. Place the plum halves on the cake .
  11. Bake the plum cake at 160° for approx. 30 minutes.
  12. Let the plum cake cool down and dust with icing sugar.
