Light Christmas cupcakes with cream cheese frosting and snowflakes
Ingredients
Dough
- 60 g margarine
- 70 g sugar
- ½ p. Vanilla sugar
- 1 egg
- 125 g flour
- 1 tsp baking powder
- 50 ml milk
Topping
- 60 g butter
- 125 g double cream cheese
- 125 g powdered sugar
- ½ vanilla bean
- 50 g fondant, for the snowflakes
- 1 handful of sugar pearls
Utensils
- Hand mixer
- Mixing bowl
- Muffin tin
- Paper cups
- Piping bag
- Spoon
- Dough roller
- Snowflake punch
Instructions
Mix the dough
- Margarine in a bowl.
- Add the sugar, vanilla sugar and eggs.
- Mix the baking powder with the flour and stir in alternately with the milk.
- Preheat the oven to 180 degrees.
- Place the muffin cases in the muffin tin.
- Den Fill the batter into the moulds.
- Bake the muffins for 15-20 minutes at 180 degrees.
- Let the muffins cool down.
Topping
- Roll out the fondant and stamp out the snowflakes.
- Let the fondant snowflakes harden.
- The Slowly melt the butter and let it cool.
- Whip the butter with the cream cheese.
- Scrape out the pulp from half a vanilla pod.
- Add the vanilla pulp to the cream.
- Sieve in the icing sugar and stir everything into a uniform topping cream.
- The frosting cream for Chill for 1 hour.
- Pour the frosting cream into a piping bag.
- Pipe the frosting onto the cupcakes.
- Top the Christmas cupcakes with snowflakes and decorate with sugar pearls as you like.
