Lemon Cake with Cream Cheese Frosting
Ingredients
Dough
- 240 g butter, soft
- 180 g sugar
- 4 eggs
- 120 g flour
- 100 g Almonds, ground
- 1 lemon
- 2 tsp baking powder
Cream cheese frosting
- 50 g butter, softened
- 250 g powdered sugar
- 250 g cream cheese, room temperature
Utensils
- Bowl
- Hand mixer
- Springform
- Spatula
Instructions
Prepare the cake batter
- Mix together the butter and sugar.
- Stir in the eggs.
- Add the flour and baking powder.
- All good mix to form an even dough.
- Grate the lemon zest and squeeze out the lemon juice, mix both into the dough.
- Pour the dough into a springform pan lined with baking paper.
- Bake in a preheated oven at 190 °C for approx. 20 minutes.
Cream cheese frosting
- Beat the soft butter, icing sugar and cream cheese with the whisk of the hand mixer and lightly on the
- Spread the lemon cake.
- Chill the lemon cake until ready to serve.
Garnish the lemon cake with grated lemon zest and serve chilled.
