Ingredients

  • 6-8 slices of rye bread
  • 6 tbsp sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 220 g mascarpone, or cream quark
  • 4 tbsp cream
  • 120 g cranberries
  • chocolate, optional

Instructions

  1. Use a knife to cut off the crust from the rye bread.
  2. Using a stand mixer, grind the bread into fine crumbs.
  3. Mix the crumbs with 2 tablespoons of the sugar, cinnamon and half the vanilla extract.
  4. In a non-stick pan, mix the mixture Roast for 2 to 3 minutes, stirring constantly.
  5. Let the bread mixture cool afterwards.
  6. Using a mixer, mix the mascarpone with the cream, 2 tablespoons of sugar and the remaining vanilla until smooth.
  7. Mix the cranberries with the remaining sugar in a bowl.
  8. Crush the berries in a blender.
  9. Layer the crumbs, cream and berries in a glass or bowl.
  10. Top the layered dessert with grated chocolate to taste.

Instead of fresh berries, jam that is not too sweet can be used for the dessert.
