Ingredients

  • 250g chicken fillets, boned chicken thighs or chicken breasts
  • ¹⁄₂ cloves garlic
  • 1 piece ginger
  • 1 tsp curry powder
  • 1 tsp sugar
  • 1 tbsp soy sauce
  • 1 tbsp sake, Japanese rice wine
  • 4 tbsp flour
  • 4 tbsp potato starch
  • frying oil, approx. 2 cups for frying

Utensils

  • knife
  • cutting board
  • fine grater
  • bowl
  • freezer bag
  • frypan
  • bowl
  • paper towels
  • kitchen tongs

Instructions

  1. Cut the chicken fillets into bite-sized pieces.
  2. Grate the garlic and ginger on a fine grater.
  3. Mix in the curry, sugar, soy sauce and sake.
  4. Rub the meat well with this marinade.
  5. Place in a freezer bag and Place in the fridge for 1 hour.
  6. Heat the frying oil in a frying pan or saucepan.
  7. Mix the flour and potato starch in a bowl.
  8. Bread the pieces of meat in this mixture.
  9. Fry the chicken pieces until golden brown on all sides.
  10. Place on paper towels to soak up excess fat.
  11. Serve with mayonnaise dip or other sauce on Karaage Chicken.

Karaage chicken can be served warm or cold. The Japanese dish tastes incredibly good with rice and sauce.
