Ingredients

Salad

  • 100g kale, fresh
  • 200ml orange juice
  • 1 butternut squash
  • 1 apple
  • 1 tsp oregano
  • Salt, to taste
  • 20g pumpkin seeds
  • 1 handful cranberries

Dressing

  • 1 tsp Dijon Mustard
  • 1-2 dates
  • juice, half a lemon

Instructions

Dressing

  1. Mix the dates, mustard and lemon juice finely.

Salad

  1. Chop the kale leaves into small pieces.
  2. Rinse under cold water.
  3. Put the kale in a bowl.
  4. Mix in the orange juice, massaging well with it Leaves soften a little.
  5. Leave the salad covered for about 30 minutes in the fridge.
  6. Peel the butternut squash and cut into cubes.
  7. Place the diced pumpkin on a baking tray lined with baking paper.
  8. Sprinkle with oregano and a little salt.
  9. Bake the pumpkin in the oven at 180 degrees for about 20 minutes.
  10. Mix the dressing with the kale.
  11. Place the kale on a large plate.
  12. Cut the apple into narrow wedges and arrange on the salad.
  13. Sprinkle the kale salad with pumpkin seeds and cranberries and serve.

The kale salad can be prepared with roasted walnuts and various berries.
