Juicy poppy seed strudel made from yeast dough with milk and sugar

Ingredients

Filling

  • 100 g poppy seeds + 2 tsp
  • 100 ml milk
  • 4-5 tbsp sugar

Dough

  • 20 g yeast, fresh
  • 150 ml milk + 1 tbsp
  • 3-4 tbsp sugar
  • ½ tsp Salt
  • 40 g butter + 1 tbsp
  • 2 eggs
  • 300 g flour

Instructions

Prepare the filling

  1. Rinse the poppy seeds in a fine sieve and drain.
  2. Mix the milk and sugar in a saucepan and bring to the boil.
  3. Add 100 g of poppy seeds to the milk and cook for 5-10 minutes while stirring.
  4. Cover the saucepan and simmer for 1 hour.

Prepare the batter

  1. Crumble the yeast and mix with 150ml warm milk, the sugar and salt.
  2. Melt the butter and pour into the milk mixture.
  3. Add 1 egg and mix until smooth is.
  4. Add the flour to the liquid ingredients and knead into a soft, slightly sticky dough.
  5. Pour the dough into a bowl, cover with cling film and leave to rise in a warm place for 1-2 hours.

Prepare the poppy seed strudel

  1. Poppy seed mixture grind through a meat grinder or blend in a stand mixer.
  2. Then place in a sieve and drain to remove excess liquid.
  3. Once the dough has doubled in volume, knead again to a 4-5mm thick rec Roll out into a square sheet.
  4. Distribute the filling evenly over the dough.
  5. Then roll up and pinch the edges together.
  6. Cover with cling film and leave to stand in a warm place for 40 minutes.
  7. Preheat the oven to 180°C.

  10. Grush the poppy seed strudel with it and sprinkle with the remaining poppy seeds.
