Ingredients

  • 2 pears
  • 3 eggs
  • 150g sugar
  • 230g mascarpone
  • 220g flour
  • ¼ tsp salt
  • 45g cornstarch
  • 2 tsp baking powder
  • 2½ tbsp vegetable oil, + some for brushing

Instructions

  1. Peel the pears, chop one into small cubes.
  2. Cut the second into small wedges.
  3. Beat the eggs and sugar in a bowl.
  4. Then add the mascarpone.
  5. Mix together the sifted flour, salt, cornstarch and baking powder.
  6. Add the dry ingredients to the egg mixture, mix gently.
  7. Pour in the oil, mix again.
  8. Fold in the diced fruit.
  9. Mix to distribute the pears evenly.
  10. Pour the batter into an oiled baking pan.
  11. Flatten slightly.
  12. Spread the remaining fruit wedges on top.
  13. Put in the oven for approx. 45-60 minutes at 170 °C.
  14. Remove the pear cake from the oven and serve warm or cold.

You can use a toothpick to check if the pastry is done. It should be pulled out dry and without any leftover dough.
